शायद आपको बिलकुल भी पता नहीं होगा कि देश और दुनिया की सबसे महंगी सब्जी कौन सी है. लेकिन आपको बता दें कि ये सब्जी भारत में मिलती है  और ये सबसे महंगी सब्जी हिमालय से आती है. भारत की इस सब्जी की दुनिया भर में आज बड़ी मांग है. अगर आपको ये सब्जी एक किलोग्राम खरीदनी है तो आपको खर्च करने पड़ सकते हैं करीब 30 हजार रुपये. भले ही इस सब्जी को पकाने के लिए खासी मेहनत की जरूरत पड़ती है. क्योंकि इसे खाने से दिल संबंधी कोई भी बीमारी नहीं होती है. इसके अलावा ये सब्जी शरीर को कई दुसरी तरह का पोषण भी देती है. ये एक तरह से मल्टी-विटामिन की प्राकृतिक गोली है. 

तो अब आपको पहले इस सब्जी का नाम बता देते हैं तो इसका नाम है गुच्छी (Gucchi).और ये भारत में हिमालय पर मिलने वाले जंगली मशरूम की एक प्रजाति है. बाजार में इसकी कीमत 25 से 30 हजार रुपये किलो है. गुच्छी नाम की इस सब्जी को बनाने में ड्राय फ्रूट, सब्जियां और देशी घी का इस्तेमाल किया जाता है. ये भारत की एक दुर्लभ सब्जी है, जिसकी मांग विदेशों में भी होती है. अक्कसर अब लोग मजाक में कहते हैं कि अगर गुच्छी की सब्जी खानी है तो बैंक से लोन लेना पड़ सकता है.

लजीज पकवानों में गिनी जाने वाली और औषधीय गुणों से भरपूर गुच्छी के नियमित  इस्तेमाल से दिल की बीमारियां नहीं होती हैं. दिल की बीमारियों से पीड़ित लोग अगर इसे रोज थोड़ी मात्रा में ले तो उन्हें खूब फायदा होगा. इस सब्जी को हिमालय के पहाड़ों से लाकर पहले सुखाया जाता है और इसके बाद इसे बाजार में उतारा जाता है. इसमें अलग-अलग क्वालिटी की सब्जी आती है

आपको बता दें कि गुच्छी का वैज्ञानिक नाम मार्कुला एस्क्यूपलेंटा है. आमतौर पर मोरेल्स भी कहते हैं. इसे स्पंज मशरूम भी कहा जाता है. यह मशरूम की ही एक प्रजाति मॉर्शेला फैमिली से संबंध रखता है. यह ज्यादातर हिमाचल प्रदेश, जम्मू-कश्मीर के पहाड़ों पर उगती है. कई बार बारिश के सीजन में ये खुद ही उग जाती हैं. लेकिन इसको अच्छी मात्रा में जमा करने में लोगों को कई महीने तक लग जाते हैं. क्योंकि पहाड़ पर इतनी ऊपर जाकर और जान जोखिम में डालकर यह सब्जी लाना ही इसकी कीमत को बढ़ाता है.

गुच्छी (Gucchi) को बारिश में जमा करके सुखाया जाता है. फिर इसका उपयोग सर्दियों में ज्यादा किया जाता है. अमेरिकी, यूरोप, फ्रांस, इटली और स्विट्जरलैंड के लोग कुल्लू की गुच्छी को बहुत ज्यादा पसंद करते हैं. गुच्छी में पर्याप्त मात्रा में विटामिन-बी, डी, सी और के होता है. माना जाता है कि इस सब्जी में हद से ज्यादा पोषक तत्व मौजूद होते हैं. 

कुदरती तौर पर जंगलों में उगने वाली गुच्छी सब्जी फरवरी से लेकर अप्रैल महीने के बीच ही मिलती है. उस वक्त बड़ी-बड़ी कंपनियां और होटल व्यवसायी इसे हाथों-हाथ खरीद लेते हैं. इसी बजह से इन इलाकों में रहने वाले लोग सीजन के समय जंगलों में ही डेरा डालकर गुच्छी इकट्ठा करते हैं. इन लोगों से गुच्छी बड़ी कंपनियां 10 से 15 हजार रुपये प्रतिकिलो के हिसाब खरीद लेती हैं. और बाद में ये कम्पनियां बाजार में इसे  25 से 30 हजार रुपये प्रति किलो के भाव से बेचती है

इस सब्जी पर शोध करने वाले वैज्ञानिक कहते हैं कि पहाड़ के लोग भी जल्दी गुच्छी (Gucchi) चुनने नहीं जाते. क्योंकि गुच्छी एक बार जहां उगती है, जरूरी नहीं उसी जगह अगली बार भी उगे. कई बार यह सीधी चढ़ाई पर उग जाती है. या फिर गहरी घाटियों में. कभी-कभी तो पहाड़ों पर ऐसी जगह उगती है जहां पहुँच पाना नामुमिकन होता है.  गुच्छी से जुड़ी कई कहानियां भी लोगो के जरिए सुनाई जाती हैं कि जब पहाड़ों पर तूफान आता है और उसी समय बिजली गिरती है तो गुच्छी की फसल पैदा होती है. हालांकि, पाकिस्तान के हिंदुकुश पहाड़ों पर भी ये सब्जी उग जाती है. वहां भी लोगों ने इसे देखा है. पाकिस्तान के लोग भी इसे सुखाकर विदेशों में बेचते हैं. विदेशों में इसे दुनिया का सबसे बेहतरीन मशरूम कहा जाता है

ज्यादातर लोगों को सुखाए हुए गुच्छी (Gucchi) ही खाने के लिए मिलती हैं. इसलिए उसमें वो स्वाद और स्पंजीनेस नहीं आता जो कि ताजा गुच्छी को खाने में आता है. कश्मीर के लोग जब गुच्छी को एकदम ताजा-ताजा मसालों के साथ पकाते हैं तो इसका देसी स्वाद और भी बेहतरीन लगता है. दुनिया भर के रेस्टोरेंट्स में गुच्छी (Gucchi) के कबाब बेहद प्रसिद्ध हैं. यही नहीं गुच्छी से लोग मिठाई भी बनाते हैं. जब आप इसका मीठा लकड़ी वाला मस्क स्वाद महसूस करते हैं तो अलग ही आनंद आता है. 

कई लोग गुच्छी (Gucchi) का पुलाव भी बनाते है. कश्मीर में इसे बट्टकुछ कहते हैं. ऐसी जानकारी भी सामने आई है कि सिंहस्थ कुंभ में कुछ अखाड़े किसी एक दिन या कुछ दिन तक अपने यहां भंडारे में गुच्छी (Gucchi) की सब्जी बनवाते हैं. जिस दिन ऐसा होता है उस दिन साधु-संतों के उस अखाड़े में प्रसाद खाने वालों की खासी भीड़ होती है.  सदियों से हमारे देश में गुच्छी की सब्जी का इस्तेमाल किया जाता है इसकी असल बजह है गुच्छी की सब्जी में पाए जानेवाले पौष्टिक तत्व जिनकी बजह से गुच्छी की सब्जी देश दुनिया में सबसे महँगी सब्जी है और लोग आज भी इसको खूब पसंद करते है
